Catfish and Fried Potatoes 2-12-11

While shopping at Costco today, I was wondering what to fix for dinner. I stopped by the fish and they had farmed catfish fillets for a good price. I texted Lynda to see what sides she wanted and replied fried potatoes and green beans. They just so happened to have some fresh French style green beans.
I peeled some Yukon Gold potatoes then sliced them using my box grater.


Note to self! Find a Pampered Chef party and get the missing part for your mandolin to make this task easier.

Seasoned Flour
Panko
2 eggs, milk, couple of dashes of Tabasco

While the pan for the potatoes was heating up, I got my flour, egg mix, and panko covering for the fish. I had corn meal but Lynda and I agreed why not try the Panko?




I put olive oil and butter in my smaller cast iron skillet and then the potatoes. I let them cook at medium high until I could see the edges brown, Once I saw the color change, I covered the potatoes with an inverted plate then slid them back in the pan.
I then cooked the other side for about the same time then I put the skillet into a 350 oven while I cooked the fish.


I filled my bigger pan with canola oil until it was about 2/3 full. I then cranked the heat under it and waited until a piece of panko danced around the oil and turned brown quickly.
While the oil was coming to temp I got the fish ready. First into the flour with the right hand, egg wash with the left, and panko with the right. Repeat until done. I let the fish rest at this point to better set the coating.
When the oil is hot, carefully drop the fish away from you into the hot oil and cook until GB&D.
Thank you Food Network, especially Alton Brown. His idea of inverting the wire rack on the towels to help wick away the extra oil is great. Also his use of GB&D, Golden Brown & Delicious.
Here is the finished meal. The green beans were placed into a microwave cooking bag with butter, kosher salt (TY AB), and pepper. 4 mins on high and they are perfect.

  1. It was excellent, best catfish I've ever had!! The fresh green beans were cooked perfectly and had a great nutty flavor.
